BAKED BUFFALO WINGS

Buffalo Wings with House Made Ranch

Ingredients for Buffalo Wings

  • 2 pounds of chicken wings, separated into drums and flats

  •  Â½ Tablespoon of garlic powder

  • 1 teaspoon of Kashmiri red chili powder

  • 1 teaspoon of paprika

  • 1/2 teaspoon each of sugar, salt and black pepper

  • 1 Tablespoon of Baking powder 

  • 2 Tablespoons of oil, I like EVOO or Extra Virgin Olive Oil

Ingredients for Buffalo Sauce

  • a ½ cup of your favorite wing sauce

  •  2 Tablespoons of unsalted butter

  •  2 teaspoons of honey

  •  Â¼ teaspoon of salt

  •  Â½ teaspoon of Jalapeno powder

  • 1 teaspoon of paprika

Ingredients for Ranch Dipping Sauce​

  • 2 TBS sour cream

  • 2 TBS mayonnaise

  • 1 tsp extra virgin olive oil

  • 1 TBS fresh squeezed lemon juice

  • 1/2 TBS each of chopped, fresh dill, flat leaf parsley and cilantro

  • 1/2 tsp fresh cracked black pepper

  • 1/2 tsp of salt or to taste

  • 1/2 tsp onion powder

  • 1 clove of fresh garlic, minced 

  • 1/4 cup water

Method: 

Preheat the oven to 400 degrees F. Dry the wings very well in between some paper towels.  Put the wings in the bowl and add all of the spices and baking powder (this reacts with the skin on the wings and makes them crispy). Also add 2 Tablespoons of oil, I like EVOO or Extra Virgin Olive Oil.

Mix the spices into the wings and lay them out on a wire wrack on a tray lined with foil. You might want to spray the wrack with some cooking spray to prevent sticking. Place them in the oven, more toward the top and let them bake for around an hour and ten minutes or so—it depends on the size of your wings. But about halfway through, take them out of the oven to flip them over. While the wings are finishing up, make the buffalo sauce.

In a small saucepan on medium low heat, add your favorite wing sauce or hot sauce to the pan, use a little less if you like your wings on the dryer side. Then add the unsalted butter, honey, salt, Jalapeno powder and paprika. Stir this together and lightly simmer for about a minute.

Pull the wings out of the oven. Toss the wings with the sauce in large bowl and get ready to for some incredible buffalo wings. You won’t believe these were made in the oven!  I serve mine with some cucumber sticks and house made ranch (mix all ingredients listed above let sit for at least a half hour for flavors to combine before using).
