NAAN PIZZA 3 WAYS
Gyro with Tzatziki Sauce, Chicken Tikka and Pesto/Sun Dried Tomato Pizza
Ingredients for Gyro Pizza
Naan Bread
Chopped tomatoes, seeds removed
Pre-cooked gyro meat slices (lightly cook these in a pan to render off some of the fat so the pizza is not overly greasy)
Some chopped sweet onions
Shredded part-skim mozzarella cheese
Fresh dill
Diced cucumbers
Tzatziki sauce (See below)

Ingredients for Chicken Tikka Pizza
Naan Bread
Any jarred pizza or spaghetti sauce
Thinly sliced red onion
Sliced, sweet red and yellow peppers
Leftover chicken tikka pieces
Shredded cheddar and mozzarella cheeses
Dried oregano

Ingredients for Pesto/Sun-Dried Tomato Pizza
Naan Bread
Fresh Mozzarella slices
Sun-dried tomato halves
Ready made basil pesto
Fresh basil torn into small pieces for topping the pizza once it comes out of the oven

Method:
Preheat the oven to 400 degrees F. Lightly grease the bottom of a pizza pan with olive oil. Place the naans on top and apply a light coat of olive oil to to the flatbreads as well.

Add the tomatoes and onions on the Gyro Pizza, followed by the meat and cheese--layer the toppings however you want.
For the Chicken Tikka Pizza, add a couple of tablespoons of tomato sauce on the pizza, followed by the onions, peppers and chicken tikka pieces. Add the cheeses and sprinkle oregano on top.
And for the Pesto Pizza, add a couple of tablespoons of prepared pesto sauce on top of the naan, followed by the sun-dried tomatoes and fresh mozzarella slices (tear slices in half so they fit on the naan better).
Bake the pizzas for 10 minutes and then lightly broil for another couple of minutes until lightly golden. When broiling, watch closely so the pizzas do not burn.

After removing from the pizzas from the oven, add the diced cucumbers and fresh dill to the gyro pizza and drizzle with the Tzatziki sauce. Sprinkle the pesto pizza with fresh basil leaves for color and flavor. The Tzatziki sauce also tastes great on the Chicken Tikka pizza!

Quick Tzatziki Sauce:
In a bowl, add two TBS each of Mayonnaise and plain yogurt (non-fat or Greek works fine here). Then add 1/4 tsp each of salt and pepper, ½ tsp of onion powder and a ½ tsp of garlic powder, ½ tsp of dried dill and 2 tsps. of fresh or bottled lemon juice. Mix these together and put the sauce in a squeeze bottle if you have it.
