LEMON BUTTER PASTA WITH SPICY SHRIMP
Fusion Shrimp Scampi Recipe
Ingredients (Yield: 6 Servings)
16 oz or 1 box of spaghetti
1 TBS olive oil and salted butter (for pan frying the shrimp)
1 pound of large shrimp which are peeled, deveined and tail off
1 tsp of salt
½ tsp of black pepper
1 tsp of garlic powder
1 tsp of coriander/cumin powder
A ½ tsp of sugar
A ½ tsp of red pepper flakes
1 tsp of Italian seasoning
½ tsp of sweet paprika

For Cream Sauce:
4 TBS of butter
3 cloves of chopped garlic
¾ of a cup of heavy cream
1 tsp salt
½ tsp of black pepper
juice of 1 lemon, only use fresh lemon juice
2 TBS of lemon zest
½ cup of a good, grated parmesan cheese
1/3 of a cup of chopped flat leaf parsley

Method:
Mix the dry spices together with the shrimp and let that marinate for at least 5 minutes for the flavors to combine.

In the meantime, put on a pot of water on medium high to boil 16 oz or 1 box of spaghetti. Add some salt, about 2 tsps. to the water to flavor the pasta as it boils.

When the water comes to a light boil, add the pasta, stir to separate and cook until the pasta is al dente, or ‘toothsome’. This means the spaghetti is not too soft and still has a bite to it. That can take around 10 to 15 minutes depending on the type of pasta and how hot the water is.

While the pasta is boiling, make the cream sauce. In a pan on med low heat, add the butter and let it start to melt. Then, add the chopped garlic and let that cook for around a minute before adding the heavy cream, salt and black pepper. Next, add the lemon juice and zest. Also add the grated parmesan cheese—this thickens the sauce and adds good flavor, and the chopped flat leaf parsley for fresh herby flavor. Cover and set aside while you quickly pan fry the shrimp.

To a large, nonstick pan on medium high heat, add the olive oil and salted butter. Then, add the shrimp and try to spread them out in an even layer so they can fry nicely. After a couple of minutes, turn them over and let the other side get a bit crispy. Try not to overcook the shrimp, so the whole process should not take longer than 5 minutes.

By this time, the pasta should be cooked. Drain the pasta and add the cream sauce to the pot. Mix this all together and serve with shrimp.
