GENERAL TSO'S CHICKEN

With Homemade Tso Sauce

Ingredients for Chicken (Yield: at least four servings)

  • 1.5 lbs of boneless, skinless chicken (like chicken breast), diced into half inch pieces

  • 1/2 tsp each of salt and pepper

  •  2 tsps of garlic powder

  • 1 tsp of ginger powder

  • 1 tsp of onion powder

  • 1/2 tsp of red chili powder

  • 1 tsp of garam masala spice mix 

  • 1 tsp of sesame seeds

  • 1 TBS light cooking oil

  • 1/2 TBS toasted sesame oil

  • 1 TBS light soy sauce

  • 1 tsp baking powder

  • 3 TBS corn starch

  • 1/4 cup all purpose flour 

  • 1 egg

Method: 

Mix all of the above ingredients with the chicken in bowl. Note: the batter will be thick. If very dry, add 1-2 TBS of water so that the batter coats the chicken in a paste like consistency. Then, leave the chicken to marinate while preheating your fryer or deep pot of oil on the stove. Heat to 350 degrees Fahrenheit.

Depending on how large your fryer is, you may fry all the pieces at once or in small batches. Turn the pieces to prevent sticking after the first couple of minutes of frying.

When the chicken pieces are golden, remove them from the fryer onto a wire wrack covered tray while you prepare the Tso sauce. To a cold Wok or deep pan, add the ingredients below. Bring this to a strong simmer on medium high heat and reduce to a light syrupy consistency. Then, add the fried chicken and fold to coat.

Tso Sauce Ingredients:

  • 1 TBS of oil

  • ½ tsp of ginger powder

  • 1 tsp of garlic powder

  • 1 tsp of onion powder

  •  Â½ tsp of salt

  •  Â½ tsp of garam masala

  •  1 tsp of sesame seeds (optional)

  •  Â¼ cup of light soy sauce

  •  Â¼ cup of ketchup

  • ¼ cup of Thai sweet chili sauce

  • 2 tsps. of Sambal which is an Asian garlic chili paste (reduce to 1 if you like it less spicy)

  • 1 tsp of toasted sesame oil

  • 1/3 cup of water

  •  a pinch of citric acid or if you don’t have that, then 1 tsp of fresh lemon juice
