BBQ SHORT RIBS

Easy Beef Short Ribs Made in the Oven or Grill

Ingredients

  • 3 lbs. of beef short ribs

  • 3 TBS. of Olive Oil 

  • 1 TBS of pink salt or 2 tsps. if using table salt

  • 2 tsps. of medium course ground black pepper

  • 1 TBS plus 1 tsp garlic powder

  • 1 tsp red chili powder or cayenne

  • 2 tsps. of ground coriander

  • 1 tsp of ground cumin

  • 1 tsp of dried thyme

  • ½ tsp of cinnamon powder

  • 1 to 2 TBS of white or brown sugar

  • ½ tsp of citric acid

  • BBQ Sauce (like Sweet Baby Ray's BBQ Sauce)

  • Prepared Tamarind Sauce (like Maggie Tamarind Sauce)

Method: 

Short ribs usually come from the chuck portion of beef, which means it’s best to cook them on a low temperature in the oven so that the fat and connective tissues in the meat become super tender. So, the first thing to do is preheat the oven to 300 F.

Next, put together the dry rub in a bowl and set aside. Then, in another large bowl, pour the olive oil on the ribs and add the rub. Give the ribs a good mix and set it aside for at least 15 minutes. You can even do this part the night before and let it hang out in the fridge until you’re ready for them. But setting them aside for a bit will ensure the dry rub has a chance to adhere to the meat and the flavors will meld together.

Next place the ribs apart in a deep baking tray, cover tightly with foil and put the tray toward the top of the oven. Bake the ribs for about 3 hours or until the meat is fork-tender. Right before the ribs are done baking, combine equal parts of the BBQ sauce and some prepared Tamarind sauce.  Brush the sauce liberally on the ribs and put the ribs either on a grill or under the broiler for 5-7 minutes for the sauce to caramelize and melt into the meat.

These ribs are deliciously tender, lightly sweet and tangy--with just the right hit of spices—the dry rub is really spectacular and multi-purpose. This recipe is seriously easy and the results are so worth it!
