DOUBLE KEBAB SMASH BURGERS

With Parmesan Truffle Fries and Secret Sauce

Ingredients for Burgers (Yield: at least 6 burgers)

  • 6 Brioche hamburger buns

  • 1 tomato, sliced

  • 1 small onion, sliced into rings

  • Kosher Dill hamburger pickles

  • 1/2 stick salted butter, softened 

  • 2.5 lbs. ground beef (use an 80/20% meat to fat ratio if possible)

  • 1 tsp pink salt

  • 1 tsp black pepper (medium course ground is best, I use the butcher block variety)

  • 1 tsp red chili powder

  • 1 tsp onion powder

  • 2 tsps. coriander/cumin powder (dhana jeeru)

  • 1/2 tsp ground mustard powder

  • 1 Tbsp mayonnaise

  • 2 Tbsps. Light Soy Sauce (or 1 Tbsp regular)

Method: 

First, spread the softened butter on the inside of the top and bottom of each Brioche bun and lightly toast buttered side in a pan. Slice, onions and tomatoes. Keep ready all of the toppings and condiments before making the burgers. Make special sauce (see recipe below).

Start air-frying or baking shoestring fries (any kind you like, see recipe for parmesan truffle fries below). What we want is for everything to be ready to enjoy together.

Next, in a medium sized bowl, combine spices, mayonnaise and soy sauce into the ground beef. Be gentle when mixing to avoid tough burgers. 

​

Heat a cast iron skillet or large nonstick griddle or frying pan to a medium high heat. Add a couple of tablespoons of cooking oil (I use olive oil). Using an ice cream scoop, portion out the meat mixture. Depending on how big your skillet is, add two to four scoops on the pan. Space out the scoops at least a couple of inches apart. Let cook for about thirty seconds before taking a spatula and firmly smashing down each scoop. Tip: cover your hand with a paper towel to prevent burns from oil that may splatter.

Let cook until the edges look crispy. Adjust the heat accordingly to prevent burning. Using a thin spatula, flip the burger patty over and continue cooking.

Add a cheese slice on each patty and cover the pan for a few seconds to allow cheese to melt. Then, stack one burger patty on top of each other. Add the secret sauce on the inside of the top and bottom of each toasted brioche bun right before adding the double patty to it. Top with veggies and pickles and enjoy with your truffle fries.


Secret Sauce Ingredients:

  • 6 Tbsps. mayonnaise

  • 2 Tbsps. Siracha chili sauce

  • 2 Tbsps. ketchup

  • 1/2 tsp mustard powder 

  • salt and pepper to taste (I use a 1/2 tsp of each; course ground black pepper is best)

Method:

Mix together sauce ingredients in a bowl. If you have a condiment squeeze bottle, add the sauce to it and chill in the fridge until ready to use. If you like a lot of sauce, you can double the recipe.

Parmesan Truffle Fries:

  • 1 bag of frozen shoestring fries

  • White Truffle oil (to taste)

  • 2-3 green chilis, thinly sliced

  • chopped flat leaf parsley for garnish

  • salt and black pepper to taste

  • 1/2 cup finely shredded fresh Parmesan cheese or as much as you want

Air fry the French fries and while warm, drizzle with truffle oil (about 3-4 Tbsps. should be enough). Add the green chilis, parmesan, salt and pepper. Lightly toss to coat. Garnish with more cheese and parsley.
